1. Make ginger sauce - Melt palm sugar in a pan, then add seasoning sauce or shoyu to melt in the pan. Follow by tamarind juice and stir to combine. Then slice ginger and put it down, stir and turn off the heat. Set aside to cool.
2. Overlap seaweed and gypsum for one of each, then roll loosely (not tight) and stab toothpick into gypsum. Fry over medium heat until golden brown. Drain and set aside to cool. Serve with ginger sauce.
