Pork Curry with Herb Chanthaburi Style  (Moo Cha-Muang) - this menu is traditional food from East of Thailand. Actually this kind of menu has a lots of different formulas to cook. And this time we will cook them with regular ingredients that can find at every fresh market or every super market.
For the 2-4 person
Cooking time:  180 minutes

1. 1 bunch Chamuang leave 
2. Pork 1 kg. (cut into pieces about the size of a ping pong ball)
3. 3-5 cloves Garlic
4. 3-5 cloves Shallot
5. Lemongrass 2 Tbsp.
6. 2 Tbsp. Galangal
7. Shrimp paste 2 Tsp.
8. 3-5 Large dried chilies (cut, remove seed)
9. 4 Tbsp. Palm sugar
10. 3 Tbsp. Fish sauce 
11. 3 Tbsp. Tamarind juice
12. 3 Liters of water

1. Boil the pork and put 1 Tsp. salt down. (about 2 hours). Then put in cold water and set aside until cool.
2. Heat the pan over medium heat. Simmer chilli first, then galangal, lemongrass, garlic and shallot. Roast until smell good. Then pound them together and set aside.
3. Shred Chamuang leaves, clean with water, then drain and set aside.
4. Set the pan over medium heat. Add oil to fry with curry paste, follow by pork knuckle. Season with palm sugar, tamarind juice and fish sauce. Finish with Chamuang leaves. Stir for a while, then pour water. Simmer until water dry out. Taste sour, sweet and mellow.
