Duration : 30 minutes

1. 1 Chicken breast (medium)
2. 9 Cha-plu leaves 
3. 5 Dried Large Chilli
4. 5 cloves Garlic 
5. 3 Shallots 
6. 1 Tsp. Chopped ginger  
7. 2 1/2 Tsp. Lemongrass
8. Coriander root
9. 1/2 Tsp. Chopped Kaffir Lime 
10. 1/2 Shrimp paste
11. 3 Kaffir lime leaves
12. 3 Tbsp. Fish sauce
13. 1 Tbsp. Palm sugar 
14. 2 cups Coconut milk

1. Pounded chili paste from step 3-10 until finely. Set aside.
2. Heat the pan and fry chili paste over low heat then use medium heat.  Add coconut milk just a little, follow by roasting chicken. Then add the remaining coconut milk and wait until soft. Season with fish sauce, palm sugar and taste.
3. Chop and tear Cha-plu leaves down.  Stir a bit before turn off the heat and serve. Serve with hot steamed rice.
