Sa - Tia Mackerel - This menu is hard to find nowadays. I believe that anyone who likes to go traveling at Samut Songkram province or Mahachai or the province nearby, you may try this menu before. The taste is similar to ‘STEWED MACKEREL FISH IN SALTY SOUP’ or ‘STEWED MACKEREL FISH IN SUGAR CANE’. But they are equally delicious. You can serve this menu easily at home.

1.  2-3 Mackerels
2. 3-4 cloves Garlic
3. 3-4 Shallots
4. 2 Tbsp. Soy sauce
5. Coriander root 
6. 2-3 red chilies
7. 2-3 Large dried chilies
8. 1 Tbsp. Coriander 
9. 2 Tbsp. Black sweet soy sauce
10.  3 Tbsp. Oyster sauce 
11.  2 Tbsp. Soy sauce
12.  1 Tbsp.  Palm sugar
13.  1/2 Tbsp. Tamarind juice
14.  1 Tsp. Sesame oil 
15.  1 cup of Water

1. Boil the water and add all ingredients follow by step 9-14 and 3-7. Wait until it boils again.
2. Add mackerel fish into the pot and wait the water boil again. Then low the heat. Continue simmering over low heat until the water dry out and taste again. Sprinkle with chopped parsley before serving.

Tips

1 You can eat both if the water dries out or not. The taste is slightly soft. But the appearance of the fish is better than water dry out.
2 You should use low heat only, unless the fish will too soft. But you can decorate later.
