Recipe
How to Cook

For 1-2 persons
Cooking time : 20 minutes

1. 3/4 cups Cockle
2. 5 Bird Chilies
3. 3 Tbsp. Lemongrass
4. 10-15 Basil leaves
5. 2 Tbsp. Shallots
6. 2 Tbsp. Fish sauce
7. 2 Tbsp. Sugar
8. 1 Tbsp. Lime juice

1. Clean and blanched cockle in boiling water. (do not put all in one time) It takes about 20 seconds for just right cook. Use cockle meat only and leave some smelly cockles. Don’t forget to rinse mud from cockle too.
2. Mix dressing salad with fish sauce, sugar, lime juice and stir until dissolve. Set aside.
3. Mix cockle with spicy salad dressing, shallots, chilli, and lemon grass thoroughly. Follow with basil and stir again 1-2 times. Ready to eat.
