Kanom Jak (Coconut Sweet Rice Flour Thai Dessert) - is a Thai dessert from the wisdom of the ancient past. The main ingredients of Thai style dessert are flour, coconut and sugar (from sugar cane or coconut). Then wrapped in nipa palm leaves. Kanom Jak is very famous in Chonburi province. For this recipe, I adapt by mixing coconut, black sticky rice flour and sugar which come from my own family recipe.

1. 1 cup Black glutinous rice flour
2. 1/3 cup Tapioca Flour
3. 1/2 cup Palm sugar
4. 2 Tbsp. Sugar
5. 1 cup Grated coconut
6.2 Tsp. Salt
7. 1 1/2 -1/3 cup of Jasmine or coconut water 
8. Dried leaves of nipa palm, Small bamboo pin

1. Mix rice flour, tapioca flour until combined. Then knead with coconut meat until smooth.
2. Put palm sugar and sugar. Knead to combined and add Jasmine water or coconut water down.
3. Wrap with dried leaves of nipa palm and or mag.
4. Roast over low-medium heat. When it’s cook, it will set up and smell good.
