Cooking time : 1-1/2 hours
For 3-4 person

Sauce
2. 2 celery
3. 2 coriander roots
4. 1/2 ginger skin
5. 3 shallots
6. 1/4 onion
7. 4-5 pepper
8. 5-7 grams of black pepper
9. 1-1/2 Tbsp. of oyster sauce
10. 1 Tbsp. of sauce
11. 1-1/2 Tbsp. of soy sauce
12. 4-5 Tbsp. of Chinese vinegar
13. 1-2 Tsp. of sesame oil
14. 1/2 Tsp. of ground pepper
15. 1-1/2 Tsp. of sugar

Vegetables
1. Sliced ginger
2. Sliced spring onion
1. Wash fish’s bones and head. After that chop them and fry them into the pan.
2. Use high heat. Put Chinese vinegar into the pan and fry them together.
3. Seasoning with ingredients (half of quantity). After that pour water over their bones and boil them with low heat for 20-30 minutes
4. Sift them and seasoning for own taste. Steam the fish (upon fish’s size). Fry them for 3-4 seconds.
