Fried Shrimp Paste Ball  (Look Ka Pi Tod) - This is main side dish of every recipe of Khao-Chae. Delicious fried shrimp paste balls must be full - flavoured, and smell good with herbs, shrimp paste, pounded ingredient and crispy just right.

Cooking time: 45 minutes 
For 40-45 pieces

1. 4 Tbsp. Chopped Lemongrass
2. 1/2 cup Shallot
3. 1 Tbsp. Grounded pepper
4. 1/2 cup Shrimp paste
5. 1 cup Striped snake-head fish
6. 2 1/2 Tbsp. Garlic
7. 1 Tbsp. Coriander root
8. 1 Tsp. Leech lime skin
9. 1 Tsp. Chopped ginger
10. 2 Tbsp. Vegetable oil
11. 1/2 cup Grilled fish
12. 1/2 cup Roasted Coconut
13/ 3 Tbsp. Palm sugar
14. 1 Tbsp. Tamarind juice

Crispy Flour (for coating)

1. 1/2 cup Rice flour 
2. 2 Tbsp. Lime stone
3. 1/2 cup Wheat flour
4. 1/2 cup of Cold water

**mix all together
1. Pound all ingredients until finely. Pound pepper, lemongrass, coriander root, leech lime skin, shallot, garlic, shrimp paste and fish at last. 
2. Add oil in coconut milk, follow with all pounded ingredients. Fry until dry out and then mold.
3. Mold into a ball (1/2 inch). Press and coat with crispy flour.

Ingredient of Fried Shrimp Paste Ball (Look Ka Pi Tod)
