Fry Crispy Shallot (Hom Dang Choob Pang Tod) - We always use small - medium size of shallot that can be cut the meet in the middle without peeling off. When done, you can bring pounded ingredient stuff inside. Then coat with crispy flour and fry until crispy.

Cooking time:  45 minute
For: (depends on amount of the shallot)

1. 15 Onion (medium size)

Filling
1. 1 Chilli
2. 2 Tbsp. Onion
3. 1 Tbsp. Garlic
4. 1 Tbsp. Lemongrass
5. 1 Tbsp. Galangal
6. 1/4 Tsp. Pepper
7. 1-2 cup Oil
8. 1 cup Grilled fish
9. 1/2 cup Coconut milk / Oil
10. 2 Tbsp. Palm sugar
11. 1 Tbsp. Fish sauce
12. 1 Tsp. Shrimp paste
1. Pound all ingredients well together. Then add dried fish and pound.
2. Fry pure coconut cream, and then put pounded ingredient down. Season to sweet and salty and fry until dry.
3. Cut onion. Stuff fried filling into the onion (coat with crispy flour). 
** You can stuff fried shrimp paste into the onion as well. (optional)
