Pad Thai Sauce - This is another Pad Thai sauce recipe by Chef Pong. It may take a little longer. But we presented you in a simple way which is not difficult and very delicious.
For 500-750 ml. 
Cooking time: 1.30- 2 hours

1. 300 grams Tamarind
2. 100 grams Shallot
3. 300 grams Coconut sugar
4. 1 handful Dried chilies
5. 1 Liter of Water

1. Make tamarind juice by mixing tamarind with warm water.
2. Simmer tamarind juice with onions and dried peppers. Simmer until reduced to about 60 %.
3. Filter and then simmer it over low heat. Gradually add coconut sugar and stir well until smooth. Continue simmering for about 1 hour or until the sauce is quite thick. Season with salt or fish sauce. Ready to serve.
