1. Clean pork thoroughly. Bring to a boil with the bay leaf, onion, black pepper , cumin , beer, and water just enough to cover pork and until the pork is cooked . Stab with fork and set aside to cool and dry. (Set in the fridge for 2-3 hours or longer).
