Fried Glutinous Rice Ball Stuffed with Caramelized Coconut - Kanom Mod (Thai Traditional Dessert) - A delicious Thai dessert of the south of Thailand, from Songkhla province. A delicious fried dessert that made from glutinous flour mixed with rice flour. One inch diameter round flat dessert stuffed with coconut or mung bean. And sprinkle with sesame seeds on top. Serve together with soft drink like tea or coffee.

Serve: 75 pieces
Cooking time : 50 minutes

Filling
1. 150 grams Shredded coconut
2. 200 grams Palm sugar
3. 100 grams Jasmine water
4. Grounded salt

Dough
1. 150 grams Sticky rice flour
2. 70 grams Rice flour
3. 120-150 grams Honey
4. 1 Egg
5. Grounded salt
Filling
1. Mix palm sugar with jasmine water, grounded salt and boil until boiling. Simmer until thick, add shredded coconut and stir until smooth. Then mold into a ball and set aside.

Dough
1. Add flour, grounded salt and mix together. Make a hole in the middle and add egg yolk, honey and knead until smooth for about 10-15 minutes.
2. Marinate the dough for about 2 hours. Cover with white cloth.

Wrapping
1. Divide the dough (1- inch diameter) Spread the dough and put the filling in the middle. Then gather together. Roll the dough and place on a tray covered with a white cloth. Sprinkle sesame seeds on dessert.

Frying
1. Heat the pan over medium heat. The turn to low heat and fry for 5-10 pieces for each time until cooked and golden brown. Drain oil and leave it for 5-10 minutes to cool. Ready to serve.
