Serve: 4 person
Cooking time: 1.30 hours

1. 600 grams Crabs
2. 1/2 Carrot
3. 1/2 Onion
4. 1 Celery
5. 2 Garlics
6. 1 Garlic root
7. 100 ml. White wine
8. 50 ml. Cognac
9. 1 liter Fish stock
10. 1 liter of Water
11. 1 tbsp. Tomato paste
12. 1 bunch Bouquet Garni
13. 40 grams Wheat flour
14. 30 grams Unsalted butter
15. 100 ml. Cream
16. Salt Pepper or Cayenne
1. Rinse crab and chop into piece. Then fry in olive oil. Add Cognac until dry out.
2. Mix carrot, onion, celery, garlic root with olive oil. Add tomato paste, wheat flour and white wine in a pot.
3. Add the mixture into the pot. Heat over stove. Then add fish stock, water and remove bubbles out. Add Bouque Garni.
4. Simmer for about 40 minutes to 1 hour. Then blend all ingredient and sift only the water.
5. Season with salt, grounded pepper and cayenne. (Optional)
6. Add cream and butter. Stir well and ready to serve.
