Rainbow Macaron - Rainbow Macaron is colorful, lovely shape dessert, with a sweet delicious taste. Perfect for serving with tea or any bitter taste drinks. In concept "Keep making today and tomorrow delicious..” We left overnight to absorb the moisture in the filling to a shell. It’s so delicious with colorful like the rainbow. Stuffed with a sour lemon curd tart that goes perfectly well together with sweetness of Macaron.

Serve: 24 pieces
Cooking time: 2 hours

1. 50 grams White egg
2. 30 grams Sugar
3. 60 grams Almond (grounded)
4. 90 grams Icing sugar
5. Food coloring (blue, red, yellow)

Lemon Curd
1. 1/2 cup Lime juice
2. 1 Lemon (skin)
3. 1 Egg
4. 4 Egg yolks
5. 3/4 cup of Sugar
6. 80 grams Unsalted butter
7. 1/4 Tsp. Salt

1. Warm oven at 50 degrees C for 10 minutes. 
2. Mix ground almond with icing sugar and sift together. Set aside. 
3. Beat white egg at low speed.
4. Gradually add sugar and beat on medium speed.
5. Beat until stiff. 
6. Put meringue in almonds with icing sugar. 
7. Mix with high speed until combined.  Divide mixture into 3 cups.
8. Mix food coloring to each cup (blue, red and yellow). 
9. Mix all colors together until looks like lava. 
10. Put each color into a piping bag and alternate color. 
11. Squeeze into the tray with your hand (about 1 inch piece and spaced about 2 cm. 
12. Squeeze on a tray. Then knock on the table to force the air bubbles out.
13. If there are bubbles on the top, use a toothpick to spread the bubbles disappear. 
14. Warm the oven by turn the oven door for 15-20 minutes or until dry. 
15. Bake in the oven at 150 ? C for 15 minutes. 
16. Place Macaron in the middle of the tray. And place another tray on the top .
17. Bake for about 10-12 minutes.
18. Set aside Macaron until cool before remove out of the tray. 
19. Squeeze lemon curd filling in the middle and splice. Keep in the fridge for about 2 hours or one night. Ready to serve.

Lemon Curd
1. Mix lemon skin with 1 tbsp. sugar. 
2. Put all eggs and egg yolk, followed by the remaining sugar and stir to combine. 
3. Pour lemon juice. Add salt and stir well together.
4. Heat on the stove over low heat until mixture thickens. 
5. Remove from the stove. Add butter, stir to dissolve. 
6. Filter until smooth. Set aside to cool before keep in the box.
