Hollandaise Sauce - A classic sauce that can easily find in restaurants. Hollandaise Sauce is a favorite sauce of many people. It can go really well with fish, eggs, white meat, etc.




Hollandaise Sauce - A classic sauce that can easily find in restaurants. Hollandaise Sauce is a favorite sauce of many people. It can go really well with fish, eggs, white meat, etc.
1. 1 Tbsp. White Wine Vinegar
2. 3 Eggs Yolks
3. 200 grams Unsalted Butter
4. 3 Tbsp. Cold Water
5. 1 Tbsp. Lime
6. Salt and Pepper
1. Beat egg yolks, white wine vinegar and cold water in a mixing bowl until smooth. Then beat them in a hot water (This technique called ‘Bain Marie’) be careful not to overheat the eggs.
2. Beat for about 8-10 minutes. it will change to cream. Then slowly pour the melted butter in a small increment to beat.
3. In beating method have a same way as beating mayonnaise. But beware of the temperature. If the temperature exceeds 65 degree, the eggs will ripe. We will beat until the butter and eggs smooth well as cream.
4. Add lime. Season with salt and pepper. 

Tips

Use a large whisk. It can help a lot more energy-saving.
