1. 1 Streaky Pork (300 g.)
2. 100 g. Country Style Red Curry Paste
3. 1 cup Basil Leaves
4. 100 ml. Coconut Milk
5. 1/2 Tbsp. Sugar
6. 1 Tbsp. Fish Sauce
7. 3 Tbsp. Vegetable Oil
8. 3 Round Eggplants
9. 5 Kaffir Lime Leaves
10. 2 Tbsp. Galingale Shredded
11. 2 Red Chilies (oblique cut)
12. 4 Stalks Green Peppercorn
1. Add 1 tbsp. vegetable oil into a pan and fry the pork until scorched just a little on both sides. Then cut pork into small pieces 1 cm thick. Set aside.
2. Fry curry paste and oil together.
3. Add green pepper corn, galingale and goat pepper.  Then add pork and stir to combine.
4. Tear kaffir lime leaves into the pan and stir to combine well. Then put into the eggplants.
5. Seasoned with all ingredients. Then add coconut milk and add basil to the end. Before serving top with fresh coconut milk just a little. Ready to serve.

Tips

No need to bake until it’s done. Otherwise the meat will be too hard.
