5. Shallot

7. 1 Tbsp. Lime juice

1. Chop spring onion and parsley. Set aside.
2. Use fork stab all over the pork. Oiled all over the pork and leave it for 1/2 hour.
3. Roast pork on the pan. (not too cooked, just brown on the outside)
4. Cut roasted pork into pieces.
5. Add chicken stock into the pot. Then add roasted pork and fry until cooked. 
6. Season with fish sauce, sugar, roasted rice, shallots. Turn off the heat.
7. Add lime, coriander and spring onion. Mix well together. 
8. Sprinkle with fried chili, mint before serving.

Tips 

 You should grill pork on a Teflon pan, it will not stick with frying pan. And shouldn’t roast until too cooked.  Just grilled brown on the outside, the pork will not too sticky.
