For 2-3 Person

1. 500 geams Jellyfish 
2. Roasted Chilli Paste 2 Tsp.
3. 1 Tbsp. Shuang jia’
4. Roasted white sesame 2 Tsp. (roast over low heat)
5. 2 Tbsp. sesame oil
6. Chinese wine 1 Tsp.
7. Lettuce
8. Vegetable oil 1 Tsp.
9. Coriander Leaves
10. Salt 1/2 Tsp.

1. Washing Jellyfish by soaking in water. and squeeze many time until until not acerbate. Set aside.
2. Heat water to boil, then boil jellyfish quickly. (jellyfish will inflated) If u soak it too long it will stiff. 
3. Immediately immersed into cold water or with the ice.  Bring up and drain dry.
4. Cut Jellyfish in strips. Set aside.
5. Roast Shuang Jia chilli with the oil and bring to pound finely. Set aside.
6. Mix roasted chilli paste (without oil), Chinese wine, and salt well together. Add Shuang Jia chilli to mix well with all ingredients. 
7. Mix jellyfish with all ingredients well together. The nice smell of the ingredients will touch your nose.
8. Put lettuce on a plate, mix the jelly and place on vegetables. Spread it and sprinkle with sesame and coriander. Serve with roasted chili paste.

Tips

1. We don't use oil for roasting chilli paste because it will cover the smell of sesame oil.
2. This recipe is not spicy. But still have nice smell of roasted chillies and sesame oil.
