For 2-3 Person

1. 500 grams Hong Kong Jellyfish
2. 2 Tbsp. Sesame oil
3. 1 Tbs. White sesame
4. 1/2 Tsp. Chinese Wine
5. 1/2 Tsp. Soy sauce
6. Salt 1/2 Tsp.
7. Sugar 1 Tsp.
8. Roasted Chilli Paste 1/2 Tbsp.
9. Guilin chili sauce 1 Tsp.
10 Coriander leaves (1 stalk)
1. First step is clean Jellyfish by soak in the water and squeeze many times until not acerbate.  Set aside.
2. Heat water to boil, then boil jellyfish quickly or jumping. (jellyfish will inflated) and then immediately immersed into cold water. Set aside for a moment. Drain dry and you will see that jellyfish will shrink. When you cut it will spring and crispy.
3. Cut jellyfish into 1/2 cm strips. and set aside.
4. Cooking ingredient to mix with jellyfish by put Guilin sauce and roasted chili paste into a large bowl. Then add Chinese wine, sugar, soy sauce and salt just a little. Stir all ingredients well and taste as you like.
5. Put a piece of jellyfish in a bowl. Mix to combine well with ingredients and ladle up on the plate.
6. Garnish with coriander leaves and sprinkle with sesame just a little.
