Deep-Fried Dough Stick - Patongko - Patongko is a favorite breakfast of many people. We always eat Patongko with coffee, cocoa, joke or tofu drink. Or dip with condensed milk or Pandan custard. Cut the dough into piece and combine together, then fry until golden crisp. Let’s try to make Patongko by yourself.
1. 3 cups All purpose flour
2. Sugar 1 1/2 Tsp.
3. Yeast 3/4 Tsp.
4. Baking soda 1/2 Tsp.
5. Ammonium bicarbonate 1/2 Tsp.
6. Salt 1 Tsp.
7. 2 Tbsp. Vegetable oil
8. Water 1 3/4 cup
9. Vegetable oil for frying
1. Add sugar, yeast, baking soda, Ammonium bicarbonate, salt and oil and mix them together. Put wheat flour, using spatula stir to combine. Gently knead with hands until smooth for about 5-10 minutes. Close the lid or food film. Marinate at least 3-4 hours until the dough rise up.
2. Roll dough into a flat rectangle into 1/2 inches thick. Cut into sticks about 1/2 inch and tap water in the middle of the flour. Press over with another piece of flour in the middle stick together. Fry in hot oil in the pan over medium heat. Turn it upside down, fry until crispy and drain. Serve hot together with condensed milk or Pandan custard.
