For 1 person

1.  Narrow Rice (Small size) 90 grams
2. 3 Eggs
3. 1 cup Bean sprouts
4. 1/2 block Yellow Tofu
5. Dried Shrimp1 Tbsp.
6. Radish 1 Tbsp.
7. 2 Shallots (small)
8. Fish sauce 1 Tbsp.
9. Tamarind juice 1 Tbsp.
10. Palm sugar 2 Tbsp.
11. 2 stalks Kuichai
12. Ground Peanut 2 Tbsp.
13. Chili powder 2 Tsp (optional)
14. 1 River shrimp
15. 3-5 Tbsp. Water
16. 1/2 ball Lemon

1. Prepare all ingredients. Cut Kuichai (keep cone for decorate the dish), cut tofu, soak narrow rice noodles in water for 10 minutes.  Chop shallots, cut half shrimp, beat 2 eggs, fried eggs for wrapping Pad Thai. Mix fish sauce, tamarind juice and, palm sugar together.
 2. Wrapping Egg - set the pan over high heat. Coat all around the pan with oil. Low the heat to medium level. Pour eggs into pan and wait until cook. Bring up from the pan and set aside. 
3. Heat the pan over high heat, put remaining 1 egg down. Wait until cooked about 90% and bring up from the pan. Then add 2 tablespoon oil, add tofu in hot oil, shallot, radish and turn to high heat. Follow by Narrow Rice Noodles and fry until soft. Then add Indian chili powder. If it dries, add 1-3 tbsp. water. When it’s soft, add fish sauce, tamarind juice, palm sugar that you already mixed together down and stir to combine. Finally, add 1 cup bean sprouts, Kuichai leaves and egg that you set aside before. If it’s too wet you can put a little bit ground peanut.
4. Put Pad Thai into a bowl that already spread with egg. Then put into the dish.
5. Grill shrimp in a frying pan or grill pan. When cook, put Pad Thai into the dish. Decorate with Kuichai, bean sprout, lime or add more banana blossom, Tiger Herbal, ground peanut and pepper as you like.
