Stuffed Cucumber Soup (Gang Jued Tang Gwa Yad Sai) - This mellow soup combined with cucumber filled with marinated minced pork, together with vermicelli which mold like a rambutan.

Stuffed Cucumber Soup (Gang Jued Tang Gwa Yad Sai) – This mellow soup combined with cucumber filled with marinated minced pork, together with vermicelli which mold like a rambutan.
For 4-5 person

1. 8-10  Cucumbers
2. 200 grams Minced pork
3. Coriander root, garlic, pepper (pound together) 1 Tbsp.
4. Tapioca flour/ Corn flour 1 Tbsp.
5. 2 Coriander Root (pounded)
6. 2 Cloves Garlic (Crushed)
7. Soy sauce 2 Tbsp.
8.  Oyster sauce 1 Tbsp.
9. Salt 1/4 Tsp.
10. Vermicelli (soaked - cut into small pieces) 20 grams
1. Put minced pork in a mixing bowl, then pounded ingredients (coriander roots, garlic, pepper), soy sauce, oyster sauce and mix together. Add tapioca flour and knead until sticky. Add vermicelli and marinate for 10 minutes.
2. Cut cucumbers, washed, peeled and cut in half crosswise into 2 pieces.  Remove cucumber’s gut out and place with marinated mince pork instead. Keep the remaining pork in a container and set aside.
3. Pour water, coriander root, garlic, and heat to boiling. Mold marinated pork into a ball and drop in boiling water.  Put salt and soy sauce. When pork cooked, it will float up (remove foam out). When water boiling again, add cucumber stuffed with pork, and boil for 15-20 minutes. Using a fork dip in cucumber to make sure that it’s already soft. Turn off the heat. Serve in a bowl. Sprinkle with pepper and coriander leaves.
