For 3-4 person
Cooking time : 60 minutes

1. 1/2 kg. of clown knifefish
2. 1 pick of winged bean
3. 2 eggs
4. 10 sweet basil leaves
5. 5  leech lime leaves
6. 1 Tbsp. of fish sauce
7. 1 Tbsp. of palm sugar

Chili paste
8. 38 grams of dried chili
9. 6 lesser ginger
10. 12 grams of lemon grass
11. 36 grams of shallots
12. 36 grams of garlic
13. 14 grams of shrimp paste
14. 1 gram of leech lime skin
15. 8 grams of galangal
16. 2 grams of hot basil
17. 2 grams of salt
18. 1-2 roots of coriander root
Chili paste
1. Cut dried chili and take their seeds out after that soak them in the water.
2. Slice goat pepper to be smallest piece that you can and another ingredients too. Roast shrimp paste.
3. Pound coriander root and leech lime skin and dried chili , salt , lesser ginger , lemon grass , shallot , garlic , hot basil and shrimp paste together.

1. Slice leech lime leaves and sweet basil after that melted palm sugar with fish sauce and pepper. Slice bean for 3 cm.
2. Put fish meat into the bowl after that put eggs , chili paste , sweet basil , beans , palm sugar and pepper. Knead them together.
3. Knead them until they’re well combined. Fry them until done.

Fry them with used oil will give nice color of them or you can add more grounded chili too.
