Duration : 30 minutes

1. 1/4 of large Watermelon Rind
2.1/2 Snapper (divide 2 tbsp. for making curry paste)
3. 1/2 cup Cowslip Creeper (‘Dok Ka-Jorn’)
4. 5 Dried Chilies
5. 4 Shallots
6. 3 cloves Garlic
7. 1 Tbsp. Chopped ginger
8. 1/2 Tbsp. Lesser ginger 
9. 1/2 Tsp. Shrimp paste
10. 2 1/2 Tbsp. Fish sauce
11. 2 Tbsp. Tamarind  juice
12. 1 1/2 Tbsp. Palm sugar
13. 2 1/2 cups Water

1. Peel the watermelon rind. Then cut into pieces. Put salt in boiling water and keep boiling.
2. Pound curry paste in step 4-9 until finely. Follow by the fish and pound to combine together. Set aside.
3. Add curry paste into the pot that you boil watermelon rind. Season with fish sauce, sugar, tamarind juice and taste it. Wait until water melon skin soft.  Then add the fish and Cowslip Creeper to steam until cook. Ready to serve on plate.
