Grilled Sea Bass with Choco Spice Shallot (Pla Ga Pong Yang with Hom Dang Krueng Ted Chocolate) - Today we grilled Sea bass until golden brown, with crispy skin but fish meat inside is moist and tender. Served with fried crispy sweet peanut, shallot and chocolate! Another special menu on Valentine’s Day.

For: 1-2 person
Time : 15-20 minutes

1. 180 grams Sea bass
2. 1 handful Sliced sweet peas
3. 1 Shallot (sliced)
4. 3-4 Baked  Cherry tomatoes
5. 1 Lemon
6. 1 Tsp. All spice
7. 1 Tbsp. Dark chocolate
8. 2 Spring onions

1. Heat the pan and season fish with salt, pepper and olive oil. Grill skin until crispy, then turn to another side and grill until brown. Bake at 180 degrees for 7 minutes. And set aside.
2. In the same pan, add oil just a little, fry peas quickly over high heat. Season with salt, pepper and set aside.
3. Add oil just a little more. Put shallot and fry until soft. Season with salt, pepper, all spice, (or can add stock). Finally add chocolate and mix well together. 
4. Arrange the dish. Put fried shallot, peas and grilled sea bass. Decorate with baked tomatoes, sprinkle with lemon skin and place a piece of lemon together and spring onion at last. Ready to eat.
