1.  1 Sea bass (6 grams)
2. 20 grams Pork fat
3.  3 Truffle
4. 5 Chestnut

7. 1 Tbsp. Chopped garlic
8. 3 Chopped mushroom
9. 1-2 Chopped spring onion
10. Goat pepper
11. 1 Chinese Angelica

1. 2 1/2 cups Broth
2. 1/2 Tsp. Honey
3. Grounded pepper
4. 1/2 Tsp. Sugar
5. 1 Tsp. Cooking sauce
6. 1 1/2 Tsp. Soy sauce
7. 1 1/2 Tsp. Oyster sauce
8. Black soy sauce
9. 2 Tbsp. Chinese liquor
10. Tapioca flour (dissolved with water)
11. Tapioca flour (for frying fish)
12. Oil (for frying fish)
13. Sesame oil

1. Cut fish into 2 pieces and peel skin. Mix with tapioca flour and fry until golden crisp. Set aside.
2. Mix sugar, honey, soy sauce, cooking sauce, oyster sauce together and set aside.
3. Heat the pan. Add oil, pork fat, ginger, garlic and fry together with mushroom. Add ginkgo, chestnut, truffle. Season with sauce in step 2. Add Chinese wine, sesame oil on the fish.
4. Heat soup with Chinese Angelica. Season with sauce in step 2. Taste and then add black soy sauce. Wait until boiling and add tapioca flour (dissolved with water).
5. Top brown sauce on fish. Sprinkle with grounded pepper, chopped coriander root and goat pepper.

How to Cook Deep Fried Grouper Fish in Brown Sauce (Pla Gao Jian Nam Dang)
