1. Marinate pork ribs with Maggi oyster sauce and Maggi cooking sauce (1 tablespoon for each). Set aside 10 minutes. Then add oil into the pan and fry until brown. Set aside.
2. Pour water into the pot, heat and then put lemon grass, galangal, kaffir lime leaves, garlic and shallots.
3. Season with Maggi oyster sauce, Maggi cooking sauce. Add pork rib, Cherry tomatoes and simmer over low heat until cook and soft (40 minutes). Then add chili and parsley into the pot. Turn to high heat again. Remove and add tamarind juice, lime juice and ground pepper. Stir to combine and taste.
