For 2 person
Cooking time: 15 minutes

1. 1 Sea bass
2. 1/4 cup Lemon grass
3. 1/4 cup Shallot
4. 1/4 cup Pounded garlic
5. 20 Kaffir lime leaf

8. 1 1/2 Tbsp. Palm sugar
9. 1 1/2 Tbsp. Tamarind juice 
10. 1-2 cups of Crispy flour

1. Bend the bone and then skewer during the last bone on the neck to tail. Sprinkle with flour and fry over medium heat until crisp.
2. Heat oil in the pan over high heat. Fry ingredients from 2-6. Start with garlic, shallot, lemon grass, 30 seconds and follow with dried fish and kaffir lime leaves at last for 30 seconds. Then drain and set aside. Coat the fish with flour for 2-3 minutes and fry until golden brown.
