1. 2 Mackerel
2. Banana leaf
3. 3-5 Neems
4. 1/4 cup Fish sauce
5. 1/2 cup Palm sugar
6. 1/4 cup of Tamarind juice
7.  1 Tsp. Garlic, pepper, coriander root
8. 3-5 Fried chili
9. 2 Tbsp. Fried garlic
10. 1/4 cup of Water

1. Sweet Fish Sauce – Fry garlic, pepper, and coriander root with oil. Mix fish sauce, palm sugar, tamarind juice and water until dissolved. Taste and set aside. Sprinkle with fried onion (optional).
2. Grill mackerel over medium heat. Wrap with banana leaves (Pandan leaf used for wrap the stomach). Roast for 3-5 minutes each side until cooked and smell nice.
