Serve: 2 person
Cooking time: 30 minutes

1. Sea bass
2. 1/3 Chopped carrot
3. 1/2 Onion
4. 1/2 Celery
5. 1 Garlic
6. Tomato
7. 2 Garlics
8. 4 Tbsp. White wine
9. 3 Tbsp. Cognac
10. Tomato paste
11. 1 bunch Bouque Garni (Fresh Thyme, Bay leaf, Parsley)
12. 500 ml. Fish stock
13. Unsalted  butter or Olive oil (for frying fish)
14. Salt and pepper
1. Cut sea bass into piece. Season with salt and grill until cook in a pan. Then sprinkle with pepper and set aside.
2. In the same pan, add garlic, onion, celery, carrot, garlic root, tomato and fry until smell good. Then add tomato paste, white wine, Cognac and fry until dry out. 
3. Add fish stock, remove bubble out. Then add Bougue Garni and simmer for about 5 minutes.
4. Serve together with Sea bass fish.
