4. 40 ml. Cold Water

1. Mix chilli sauce and chicken sauce together. Set aside.
2. Pour rice flour, fried flour, Bob Miller's Arrowroot Flour into a mixing bowl. Then add cold water and stir together well. Add the mussels, spring onion and stir well again.
3. Heat the pan. Pour vegetable oil into it and wait until oil hot enough. Then add the mixture of flour and mussels down. Use spatula spread the flour all over the pan.
4. Break an egg into the middle of pan. Mash egg and fry until brown for a little then turn upside down.
5. Set aside to the edge of the pan. Fry bean sprouts until soft (not cooked)
6. Put bean sprouts on a plate, follow with fried mussels. Sprinkle with spring onion, coriander, cayenne pepper. Serve with fried oysters sauce and finished.
