1. Pork sirloin 1/2 kg.
2. Streaky pork 1/2 kg.
3. Hunglei powder or curry powder 1 Tbsp.
4. Fresh ginger thin sliced 1/4 cup
5. Garlic (peeled) 1/4 cup
6. Tamarind juice 1/4 Tsp.
7. Black soy sauce 1 Tbsp.
8. Sugar 1 Tsp.

9. 8 Dried Chilies remove the seeds, soak in water
10. Galangal finely chopped 1 Tsp.
11. Lemongrass chopped 1 Tbsp.
12. Garlic cut into small pieces 1 Tbsp.
13. Shallot cut into small pieces 1 Tbsp.
14. Shrimp Paste 1 Tsp.
15. Ground Salt 1 Tsp.

1. Pound all spices and set aside.
2. Sliced pork sirloin and streaky pork in 2x2 inch square piece. Mix with black soy sauce and spices. Marinate for 1 hour.
3. Add marinated pork with low heat. Fry the pork and pour water into the pot. Cover and continue simmering.Put chopped ginger, garlic, add Hunglei curry powder with low heat until soft and the water dry out. Season with salt, tamarind juice and sugar just a little. Taste sour, salty and spicy. Or you can put salt if you want it more salty.

Ingredient of Hunglei Curry

1. Pork sirloin 1/2 kg.
2. Streaky pork 1/2 kg.
3. Hunglei powder or curry powder 1 Tbsp.
4. Fresh ginger thin sliced 1/4 cup
5. Garlic peeled 1/4 cup
6. Tamarind juice 1/4 Tsp.
7. Black soy sauce 1 Tbsp.
8. Sugar 1 Tsp.

How to Cook Hunglei Curry
