Fried Pastry Filled with Chicken (Mataba Gai) - This is the most popular Islam's food in Thailand. We usually meet Mataba with Fried Southern Flat Bread Roti. Fried chicken that give a taste of curry and roll them with the dough. Serve with Ahad sauce Islamic dish made of cucumber slices and onions in vinegar.

1. 1/2 cup of wheat flour
2. 1/2 cup of sugar
3. 1/2 Tbsp. of salt
4. 1/2 cup of water

Chicken crumb 
5. grams of chopped chicken breast
6. 1 cup of chopped onion dice
7. 2 Tbsp. of chopped ginger dice
8. 1 Tbsp. of curry powder
9. 1 Tsp. of pepper
10. 1 Tsp. of salt

1. Dough - Sift the flour into the bowl then put salt , sugar and water. Knead them together and separate them for about 6-7 pieces. Then dress dough with oil and butter after that keep the dough into cover bowl for about 1 hour.
2. Chicken stuff - Warm the pan with medium heat and put the curry powder , onion , ginger chopped chicken into the pan. Fry them until they done and add sugar , pepper , salt then keep fry until they done.
3. Roll - Paint they tray with butter and put the dough on it. Press the dough by your hand (make it bigger that you can but do not let it cut). Mix the chicken stuff with egg , parsley and spring onion together and put it on the flat dough. Fold the dough cover the chicken stuff for 4 sides make them like a square.
4. Fry them with low heat until they turn to yellow and serve it up.
