For 4-5 people

1. Chaplu Leaves or Thong Lang Leaves 

Miang side dish
2. Peanuts 1/4 cup
3. Dried shrimp 1/4 cup
4. Ginger 1/4 cup
5. Coconut 1/4 cup
6. Shallot (cut into small pieces) 1/4 cup
7. Lime(cut into small pieces) 1-2 Tbsp.
8. Chilli 1-2 Tbsp.

Miang Sauce 
9. Lemon grass 1/4 cup
10. Peanuts 1/4 cup
11. Shallot (sliced and roasted) 1/4 cup
12. Galangal (sliced and roasted) 1 1/2 Tbsp.
13. Ginger (sliced and roasted) 1 1/2 Tbsp.
14. Coconut (roasted - powdered) 1/4 cup
15. Palm Sugar 1 cup 
16. Fish sauce 3 Tbsp.
17. Shrimp Paste 1 1/2 Tsp.

1. Miang side dish - cut galangal, add ginger, roast until the color change, put lemon grass, shallots and roast until cooked. Pound until finely. Add shrimp paste and put in a container. Set aside. Put fish sauce, sugar in the pot and melt together.. Heat and simmer until sticky, add pounded ingredients, taste, add roasted coconut powder, peanut powder. Turn off the gas and put in cold water.  
2. Arrange plate – Clean Chaplu or Bai Thong Lang leave. Arrange Miang side dish on plate. Serve with Miang Sauce.
